Mochi (or moti) is a new trend in the world of desserts that is rapidly gaining popularity. This traditional Japanese sweet ball of rice dough is now available in various forms. Mochi is becoming increasingly bold and diverse: familiar flavours are giving way to brilliant experiments. The classic filling is anko, a sweet paste made from red adzuki beans, considered iconic in Japan. But nowadays, the variety of ingredients is truly infinite: from rich matcha tea to refreshing fruit and delicate ice cream.
